Potato Pups by Fred Ball

Makes: 6 Servings

  • 8 Hot dogs
  • 2 cups Mashed potatoes
  • 1/2 ts Dry mustard

Split hot dogs the long way not quite all the way through.
Fill split opening with mashed potatoes mixed with dry mustard.
Sprinkle the top with paprika.
Bake in 375 degree oven for about 15 minutes or until heated through and slightly browned on top. Can also be topped with some grated cheese (cheddar or parmesan).

Rings and Things by Gail Shipp

Makes: 6 Servings

  • 1 cup macaroni rings (uncooked)
  • 1 lb Hot dogs, sliced in 1/2-inch pieces
  • 1/4 cup chopped onion
  • 2 tb Butter
  • 10 3/4 oz Can condensed tomato soup
  • 4 oz grated Cheddar cheese
  • 1/2 cup water

Cook macaroni in unsalted water as directed on package.
Drain, rinse with hot water.
In large skillet, saute hot dogs and onion in margarine or butter until onion is tender.
Reduce heat, stir in the soup, cheese and water.
Cook over low heat stirring constantly until cheese is melted.
Stir in the cooked macaroni, heat thoroughly.

Can substitute alphabet pasta, or animal shape pasta.

Cheesy Mexican Hot Dog by Gail Shipp

Makes: 2 Servings

  • 2 Grilled hot dogs
  • 2 Flour tortillas
  • Cheese spread

For each sandwich, place hot dog on tortilla.
Top with cheese sauce, roll up.
Serve with salsa if desired.

Peanut Pitas by Ghislaine Dumont

Makes: 16 snack servings

  • 8 small pita breads
  • 16 tb peanut butter
  • 16 tb strawberry jam
  • 1 lg banana, thinly sliced into 48 pieces

Spread inside of each pita half with one teaspoon each peanut butter and jam.
Fill pita halves evenly with banana slices.
Serve immediately.

Other variations:

Substitute honey for jam.
Substitute thin apple slices for banana slices.
Substitute mayo for spreadable fruit and celery slices for banana slices.

Roll-Ups

Makes: 1 Servings

  • 1 Fat free flour tortilla or Armenian flat bread
  • 1 slice of luncheon meat or vegetarian equivalent
  • 1 portion cream cheese or low fat equivalent
  • Lettuce and/or beansprouts
  • 1 Tomato slice
  • Pickled or fresh pepper slices

Spread a dressing on the tortilla, top with you favorite toppings, not too thick or it won't roll.
Roll up, wrap and take to lunch.
Or, roll up a bunch, then carefully slice about 1 1/2 inch thick, place on a lettuce lined platter and serve as party food.

Sweet version:

Tortilla, cream cheese, and jam or fruit butter.

Smiley Freezer Pizza

Makes: 4 Servings

  • 1 (12 inch prebaked pizza crust)
  • 1 cup chunky vegetable spaghetti-sauce
  • 1 cup grated mozzarella cheese
  • 1/4 cup freshly grated Parmesan-cheese
  • 2 oz Sliced ham
  • Half sweet green and/or red-pepper
  • 1/3 cup Frozen green peas

Spread pizza crust with spaghetti sauce, sprinkle with mozzarella and Parmesan.
Cut ham and sweet pepper into shapes for eyes and mouth.
Arrange over cheese along with peas to make faces.
Wrap and freeze pizza for up to 1 week.
Place frozen pizza on perforated pizza pan or baking sheet.
Bake on bottom rack in 425øF oven for about 15 minutes or until golden.
Let stand for 5 minutes.
