PERFECT PINWHEEL PIZZAS
These pinwheel pizzas
are just the right size for little fingers. They also make tasty
morsels for the grown ups. They can be made ahead and frozen and
if you don't want to make your own pizza crust you can use frozen
shortcrust pastry instead. These are good either hot or cold.
Suitable for freezing
INGREDIENTS
225g (8 oz) self-raising flour
1/4 tsp salt
50g (2 oz) butter
50g (2 oz) Cheddar cheese, grated
1 tsp mixed herbs
150ml (1/4 pint) milk
Topping
1 medium onion, chopped
100g (4 oz) button mushrooms, chopped
15ml (1 tbsp) olive oil
30ml ( 2 tbsp) tomato puree
75g (3 oz) Cheddar cheese, grated
STEP 1
Preheat the oven to 180C/350F/Gas 4. Sieve together the flour
and salt.
Using your fingertips, rub in the butter so that it resembles
fine breadcrumbs.
STEP 2
Stir in the grated cheese and herbs. Stir in the milk until the
mixture forms a soft dough. Turn on to a lightly floured surface
and knead for one minute to make a smooth dough (don't knead for
too long or the dough will become greasy).
STEP
3 Roll out the dough on a sheet of non-stick baking
paper to a rectangle about 32 X 20cm (12 X 8 in). Saute the onion
and mushrooms in the olive oil for 3 to 4 minutes. Stir in the
pesto and tomato puree. Spread the mushrooms and tomato mixture
evenly over the rolled out dough and sprinkle over the grated
cheese.
STEP 4
Using the baking paper as a guide, roll up the dough to form the
long side. Remove the baking paper and, using a sharp knife, cut
into 12 slices, each about 2 cm thick. Place cut side down on
a greased baking tray and bake for about 20 minutes or until golden.
