Pizza Omelette  
 
   

  Eat this as a special treat

 Serves One - 425 calories per serving

 INGREDIENTS: For each omelette * 2 Lion eggs * 1 teaspoon sunflower or olive oil, to grease * 25g (1oz) low fat mozzarella cheese, sliced * 2 tomatoes, one chopped, one halved * 1/2 teaspoon dried mixed herbs * salt and ground black pepper * TO SERVE * 25g (1oz) cooked green beans * 1 chunk of crusty bread, white or wholemeal
 GET READY * jug * fork * 20cms/8 inches diameter non-stick omelette pan with non-metal handle * wooden spatula * spoon * chopping board * sharp knife * grater or cheese slicer
   1 Break the eggs into the jug with a little seasoning to taste, then beat with the fork. Heat the oil in the omelette pan until it is hot and runs around the pan.
   2 Pour in the eggs and quickly swirl around the pan. Pull the mixture away from the sides, using the spatula, and tip to let uncooked eggs slip underneath.
  3 When the top is nearly set, spoon the cheese, chopped tomato and herbs over the left hand half of the omelette. Tilt the pan and, using the spatula, fold the other half over the filling.
  4 Lift the pan over the serving plate and flip the omelettes over carefully onto the plate. Serve with green beans, tomato halves and crusty bread.
