Meat Loaf Muffins

Makes: 6 Servings

  • 1 1/2 lb Lean mincemeat
  • 1 Zucchini, grated
  • 1 cup Dry bread crumbs
  • 1 Egg, slightly beaten
  • 1 ts Italian seasoning
  • 1/2 ts Salt
  • 1/4 cup Ketchup

Preheat oven to 400øF.
Coat six 2 1/2 inch size muffing pan cups with non stick cooking spray.
In a large bowl, combine ground beef, zucchini, and salt, mix well.
Divide the beef mixture evenly into the 6 muffing cups, pressing the mixture together lightly to form mounded tops.
Spread ketchup over the tops.
Place the muffin pan on a rimmed baking sheet and bake 25 to 30 minutes, or until the beef is no longer pink inside and the juices run clear.
Using a spoon, remove the "muffins" from the pan.
Place them in paper baking liners and serve.

Turkey Crepes Suzette a la Mode

Makes: 4 Servings

  • 16 Slices ( 1 lb.) deli turkey
  • 1 cup Orange marmalade
  • 1/3 cup Sweetened dried cranberries(optional)
  • 3 tb Butter
  • 1/4 ts Salt
  • 3 cups Warm mashed potatoes (instant or homemade)

Fold each slice of turkey in half and then in half again, making quarter circles; set aside.
In a large skillet, combine orange marmalade, cranberries, butter, and salt.
Cook over medium heat until the butter is melted, stirring constantly.
Working in batches, add the folded turkey to the skillet and cook 2 to 4 minutes, or until the turkey is heated through.
Arrange 4 slices of the turkey on each of 4 plates.
Place a scoop of mashed potatoes in the center of each plate and top with some of the sauce from the skillet.

Spaghetti Sundaes

Makes: 8 Servings

  • 3/4 lb mincemeat
  • 1/3 cup Italian-seasoned bread-crumbs
  • 1 egg
  • 1/2 ts Salt
  • 1/4 ts Black pepper
  • 1 pk ( 16 oz.) spaghetti
  • 1 Jar ( 16 oz.) spaghetti-sauce
  • 16 Sesame breadsticks, for garnish

Preheat oven to 350F.
Coat a large rimmed baking sheet with nonstick cooking spray.
In a large bowl, combine ground beef, bread crumbs, egg, salt, and black pepper, mix well.
Form into 8 meatballs and place on the baking sheet.
Bake for 20 to 25 minutes, or until no longer pink inside.
Meanwhile, cook spaghetti according to package directions, drain well.
In a large saucepan, heat spaghetti sauce over low heat until heated through.
Toss the drained spaghetti with the sauce until evenly coated.
Place the spaghetti in 8 sundae glasses.
Top each with a meatball, garnish with 2 breadsticks, and serve.

Nose Blow Burritos^

Makes: 1 Servings

  • 2 md Tomatoes
  • 1 lb mince meat
  • 1 pk Burrito or taco seasoning
  • 1 cn (30oz) refried beans
  • 8 or 10 burrito size soft flour tortillas
  • 2 carton (8oz) guacamole
  • 1 carton (16oz) sour cream

Dice the tomatoes into small pieces and place in a bowl.
Place the mincemeat in a frying pan, sprinkle with the burrito seasoning and saute on medium heat until it's well browned.
Cover and set aside.
Cook the beans in a saucepan on low heat, stirring occasionally. When the beans are hot, gently combine them with the mincemeat in a clean bowl.
To build the burrito beaks: Set one tortilla on a dinner plate. Spoon approximately one and one half inch wide strip of guacamole dip down the center of each tortilla. On top of that, spoon a strip of sour cream, and a strip of mincemeat and beans.
Tightly fold the left and right sides of the tortilla over your ingredients, then tuck the lower third of the whole burrito under itself, making a nose shape. Cut out two large holes for nostrils.
