The Ultimate Ploughman's Lunch With An Irish Twist

For an easy lunch with friends or a simple supper at home, a Ploughman's is unbeatable. To turn this traditional classic into a delicious meal to make your mouth water, you cannot beat the smooth and gentle taste of Wexford Mild & Creamy Irish Cheddar, with the distinctive flavour of Irish Soda Bread and the tangy bite of Apple Stout Chutney.

FOR THE SODA BREAD

Ingredients:
Makes 2 loaves
450g plain white flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
About 375ml buttermilk or fresh milk with ¾ teaspoon of tartar added

Method:

  • Set the oven to 220°C
  • Sift the flour, salt and bicarbonate of soda into a bowl, make a well in the centre, pour in most of the milk at once and mix it in with your hand, adding more if necessary - the dough should be soft, but not sticky
  • Turn the dough onto a floured surface and knead lightly, then divide into two
  • Shape each piece into a round loaf about 5cm deep, put them on a greased baking sheet, then cut a deep cross in the top
  • Bake for 15 minutes then turn the oven down to 200°C for another 10 minutes or until the loaves have risen and are golden and sound hollow when you turn them over and tap them on the base
  • Cool on a wire rack - if you prefer a softer crust, cover the loaves with a tea towel while they cool
    The Soda Bread is best eaten on the day it is made, sliced and buttered. For a richer loaf, rub 40g of butter into the flour and replace 100ml of the milk with a medium egg

FOR THE APPLE STOUT CHUTNEY

Ingredients:
4 apples, preferably green, peeled and cored
1 red onion, peeled and sliced
3 cloves garlic, chopped
300ml strong Irish stout
Tablespoon of honey
Pinch of malt (optional)
Small pinch of curry powder

Method:

  • Simmer all ingredients for approximately 45 minutes, until the liquid is almost all evaporated - if there is still quite a bit of liquid after cooking, you can dissolve a teaspoon of cornstarch with a teaspoon of water and stir it in while the chutney is simmering
  • Once chutney has thickened, remove it from stove and serve with the Soda Bread and Wexford Mild and Creamy Cheddar - the Chutney can be served cold, hot or at room temperature
