Method:

  1. Place the chickpeas in a bowl with the fromage frais and using a potato masher, crush them until most have broken down, leaving a few uncrushed to give texture.
  2. Stir in the mint and carrot and season to taste. Spread over 4 slices of Nimble.
  3. Spread the low fat spread over the 8 remaining slices of Nimble, then place 4 of them, spread side up, on top of the chickpea mixture. Add a layer of leaves, tomato and cucumber.
  4. Cover with the remaining bread, spread side down, cut in half, and serve garnished with radishes.
