Phil Vickery's Baked Brunch Loaf

Serves 6-8

Preparation time - 20 minutes
Cooking time - 25 minutes

1 large round loaf
3 hard boiled eggs peeled and sliced
2 large potatoes sliced thinly and sautéed
150g black pudding, thinly sliced
8 slices of crispy fried streaky bacon
3 red peppers, halved and roasted until very soft
6 spring onions, sliced very finely
6 thin slices Emmenthal cheese
4 grilled flat mushrooms
115g Radicchio lettuce, sliced very thinly salt and pepper
200mls extra virgin olive oil

Instructions

  • Pre heat the oven to 200°C, Gas 6
  • Slice the loaf into 3, then brush each slice with a little olive oil.
  • Place the black pudding, peppers, potatoes and spring onions on the base and season well with salt and pepper and olive oil.
  • Next top with another slice of bread, then with the cheese, mushrooms and Radicchio lettuce, season well.
  • Finally, top with the last slice of bread bacon and eggs, again season well.
  • Top with the lid and dock well with a carving fork; drizzle over the olive oil.
  • Wrap in 2 layers of foil and place on a baking sheet; bake in the pre heated oven for 25 minutes.
  • Remove from the oven and press slightly, then chill well.
  • Remove the foil and slice and serve at room temperature.
