The Basics:
5 slices of Warburtons
Wax-Wrapped Toastie Loaf
2 large red peppers
3 medium mozzarella cheeses
2 packs of fresh basil leaves
3 tablespoons olive oil / salt and pepper
The Method:
- Preheat the oven
to 200°C/400°F/gas mark 6
- Place the peppers
on a baking tray and roast in the oven for 20 minutes, until deflated
and slightly charred.
- Once cool, peel off
the skin from the peppers and cut out the of each into 12 pieces.
- Cut the bread into
medium-sized cubes, then cut the mozzarella cheeses in 1cm thick
slices.
- Thread 4 skewers,
starting with the bread and alternate with the red pepper pieces,
cheese and basil leaves.
- Place the skewers
on an oiled baking tray, brush them with the oil and season with
salt and pepper.
- Bake in the oven
for 8 minutes, turning half way.
- Serve immediately.
