Mediterranean Toasted Bread Skewers like this page ?, tell a friend
 

The Basics:

5 slices of Warburtons Wax-Wrapped Toastie Loaf
2 large red peppers
3 medium mozzarella cheeses
2 packs of fresh basil leaves
3 tablespoons olive oil / salt and pepper

The Method:

  1. Preheat the oven to 200°C/400°F/gas mark 6
  2. Place the peppers on a baking tray and roast in the oven for 20 minutes, until deflated and slightly charred.
  3. Once cool, peel off the skin from the peppers and cut out the of each into 12 pieces.
  4. Cut the bread into medium-sized cubes, then cut the mozzarella cheeses in 1cm thick slices.
  5. Thread 4 skewers, starting with the bread and alternate with the red pepper pieces, cheese and basil leaves.
  6. Place the skewers on an oiled baking tray, brush them with the oil and season with salt and pepper.
  7. Bake in the oven for 8 minutes, turning half way.
  8. Serve immediately.
