The Basics:

8 Slices Warburtons Seeded Batch Loaf
2oz butter
8 egg yolks
5oz castor sugar
10 fl oz double cream
1oz sultanas
2 tablespoons apricot jam

The Method:

  1. Turn oven to 180°C/350°F/Gas Mark 4.
  2. Chop off the crusts from the Warburtons Seeded Batch bread.
  3. Whisk the egg yolks and castor sugar together until well mixed.
  4. Place the milk and cream in a pan and simmer gently - do not boil.
  5. Remove pan from heat and add the egg and sugar mixture. Stir well.
  6. Arrange the bread in layers in a greased pudding basin and scatter the sultanas on top.
  7. Pour over the warm egg mixture and leave to soak for 30 minutes.
  8. Place pudding in a bain marie and cook for 20-30 minutes until just set.
  9. Finally, melt apricot jam in the microwave until it is liquid and then brush it over the pudding.
